Pumpkin Muffins

Fall is a very special time of the year for me and it is by far my favorite season. I love sleeping with the windows open, wearing a cute blazer with a cuter scarf, counting down the days to my birthday and eating pumpkin-flavored anything.

Historically, I've spent a good part of September and October hunting down the best pumpkin muffins in the city and eating one every. single. day. until they're no longer available. That was then; this is now. Danielle doesn't eat white flour anymore, but I refused to let that keep me from my precious.

I scoured the Internet for a couple of days to find a grain-free, sugar-free pumpkin muffin recipe and find one, I did! C'mon, you know you want some...


Grain-Free Pumpkin Muffins: (Adapted from Balanced Bites)
Ingredients:
1/2 cup (1 stick) of butter
6 eggs, beaten
1 teaspoon vanilla
1/2 cup pumpkin puree
2 tablespoons honey
2 tablespoons maple syrup
1/2 cup coconut flour
1/2 cup pecans/walnuts
1/2 teaspoon baking powder
1-1/2 teaspoon cinnamon
1/4 teaspoon cloves
1/4 teaspoon allspice
a pinch of salt

Directions:
1. Preheat your oven to 400 degrees F.
2. Grease a standard muffin tray or use paper liners (paper is probably ideal).
3. Combine wet ingredients (butter, eggs, vanilla, pumpkin, honey, maple syrup) in a large mixing bowl together until well beaten.
4. Measure dry ingredients (coconut flour, baking powder, cinnamon, cloves, allspice, nutmeg, nuts) into a sifter and slowly sift into the wet ingredients, whisking as you do so that you don't have lumps in the batter.
5. Divide the batter evenly into the muffin tins and bake for approximately 15-18 minutes or until slightly golden brown on top and a toothpick comes out clean.

Pumpkin is EVERYWHERE!
On my list of things to try are these muffins and a pumpkin spice latte....those things have a huge reputation. I wonder if they're as life changing as I've been lead to believe.

Oh yum! I made carrot cake muffins last week with cream cheese filling, I think these will be next on my list! BTW just stumbled on your blog from LA's and I LOVE it!
