Paleo Challenge: Day Eight

I cheated...but it was totally not my fault, I swear! My Love Cub and I went out to dinner on Sunday night and I ordered the Goat Cheese and Spinach Salad, not knowing that there was cheese in it. Cough, cough.

Hey, I think I did pretty damn good, okay! That was the only slip-up I had all week long. Pretty awesome considering that this was the first time I stepped away from ALL DAIRY PRODUCTS. Yeah, that deserved caps. Big ones.

I kept dairy in my diet when I started my bootleg Paleo journey last year. I just couldn't fathom what my morning cups of coffee would taste like with anything other than half & half. I mean, I was raised on that stuff! I honestly think I teared up when I used the last drop of it, but I'm determined to do this the right way (goat cheese hiccup, excluded)!

Let me tell you what life has been like without dairy: um, AMAZING! My stomach used to bloat and cramp every morning during my train ride into work. I just thought my body was protesting against leaving my cozy apartment; now I'm thinking I've been lactose intolerant for a very, VERY long time. Who knew?!

I've been using coconut milk in my coffee and guess what...it doesn't suck (too much). It's not and will NEVER be half & half, but it's okay and it doesn't make me feel like ass.

One more question about coconut milk: What brand/type do y'all use? Container or can? Organic or whatever? I MUST get coffee during my lunch break at work and unfortunately, Starbucks doesn't serve coconut milk ("yet," according to one of the baristas). So tell me, which milk should I keep in my work refrigerator?

In other news, my fitness level has been non-existent this week. Between preparing to renovate the kitchen, planning the wedding, coming down with the plague and it being 23049587235 degrees outside, I don't know when I'll make it to the gym.

I'm doing some resistance band workouts at home, just to do something. Hopefully, I'll be feeling better by the end of the week and can really start in on some fitness. 

Despite those setbacks, I mustered up the courage to step on the scale and it's a good thing I did...I'm already down six pounds and I didn't even do anything yet (really)! That's just from eating the way I've been eating, but without dairy. Pretty impressive, if you ask me. How have y'all been doing with your Paleo challenge so far?!

Hey! I can't drink milk myself (animal milk) and soy makes me sick. I keep almond milk (unsweetened) in the fridge. Can't say it tastes amazing alone, but works great w everything I've tried it with: cereal, fresh fruit smoothies...Nesquick chocolate or strawberry mix (I whispered that)
