Hello, Weekend...Goodbye

It's tough working every other weekend, but we try to make up for it by packing 2938547023875 fun activities into the weekends that we do get to spend together. Lately, we've been busy with wedding stuff on my weekends off, but this weekend was all about us!

Friday. I surprised Wil by showing up at his job at quitting time so we could ride the train home together (I get off from work 32450289357 hours before he does, so he's always surprised to see me waiting for him). We had a lovely date night (at home) that included a wonderful bottle of pinot grigio, a fantastic dinner and an impromptu Heroes marathon (yeah, we're a little late). Good times.

Saturday morning. My Love Cub and I (mostly, I) cooked a bountiful breakfast for ourselves that included Paleo Coconut Pancakes (I'm going to do a paleo post soon, I promise), yummy bacon and a spinach/sun-dried tomato/feta scramble. 

Saturday evening. We took the train into the Lower East Side to have dinner with our friends, Nitzalie and Danny. For this double date, we chose a quaint little restaurant named Three of Cups. Their slogan lived up to it's promise: "Good food. Good wine. Good friends." We highly recommend it to anyone looking for a spot to have a cool, quiet evening, soundtracked (I'm pretty sure I just made that word up) by amazing music. 

After dinner, my honey and I headed uptown to check out The Big Apple Salsa Festival. We were able to travel to a couple of salsa congresses (conventions) last year, but with all our wedding expenses adding up, we're going to have to jump on local events like this for the time being. We danced until about 3:00am and crawled into bed around 4:00am. So. Tired.

Sunday. Back to the grind tomorrow. It's amazing how quickly the weekend flies by when you're having fun. Anyway, we're going to make the best out of these last few hours of the weekend by dragging our sleepy behinds to grab some grub at Salsa Y Salsa in Chelsea before we walk over to the Jimmy Anton Social for some more dancing (It's so rare that we dance twice in a week these days. My feet are going to hate me later). I thinks it's safe to say that we got the most out of the 60 hours that we were separated from our jobs. Such a lovely weekend with my Honey Muffin.

Definitely sounds significantly better than my weekend! I'm glad my sister had lots of fun! =D
